Like so many others I have a lot of favorite foods. I hate bland foods and just love a lot of flavor. I try to have a variety of flavors to entertain mine and my man’s taste buds. One of my foods is Mexican cuisine; it’s not only full of flavor but can be spiced up with just the right heat.

Yesterday at work my coworker and I were talking about ways to make things interesting around the house. My contribution, well one of them, was to dress for dinner according to the menu. My first menu would consist of Mexican cuisine and a sexy little costume!
The menu, what should it be? What would be fun but not so hot our night would be spent in pain…if you know what I mean? I think going with one of our favorites a bit on the milder side and adding a little heat on my own would be the best idea.
Fiesta Friday Menu
My Famous Nachos …ok, famous in my house!
1 lb Ground Beef (cooked according to taco seasoning packet)
1 jar Nacho Cheese
2 cups Shredded Mexican Blend Cheese
1 cup Chunky Salsa
1 medium Tomato (Chop while nachos are heating in the oven.)
1 cup Lettuce (Chop while nachos are heating in the oven.)
Sour Cream
1 small Jalapeño (Chop while nachos are heating in the oven. Don’t forget those seeds are hot!)
1 small Habanero (Chop while nachos are heating in the oven. Don’t forget those seeds are hot!)
Guacamole (Pre-made or make it yourself!)
Nacho Chips
Oh and, Mexican music softly playing to help set the mood….a few Margaritas wouldn’t hurt either!
Heat the oven to 400 degrees.
Layers (In this order and in a large pan)
Beef
Salsa
Nacho Cheese
Mexican Blend Cheese
Spread Nacho Chips in a large pan.
Place meat mixture in the oven. Heat about 5 minutes and place the pan of nachos in the oven. Heat another 5 minutes. (Adjust time if needed for the cheese to be melted and the nachos to be just starting to brown.
Now, I know in my house when I throw this dish together, I’m a favorite! Making this wearing a costume that fits the cuisine…
Well, I’m thinking I’m on Fiesta Friday’s Menu too… dessert.
